Quick Chocolate Peanut Butter Pudding

This recipe is not something I created.  I photocopied it at some point from some cookbook from the library, and sadly I don’t know which cookbook it was!  If you recognize it you can go ahead and let me know.  In any case, it’s SUPER yummy and very quick.  I like that I know exactly what’s in it!  And seriously…who doesn’t love chocolate and peanut butter combined?!  It’s one of my very favourite combinations…

Quick Chocolate Peanut Butter Pudding:

  • 1/2 cup honey
  • 2 tbsp. arrowroot powder or cornstarch
  • 2 tbsp. cocoa powder
  • 2 cups milk (I used almond milk)
  • 1 tsp. vanilla
  • 1/4 cup peanut butter*

Combine everything in a saucepan and heat on medium heat until thickened, stirring constantly.  Serve warm or cold.

I personally like my pudding cold!  It makes about 3 cups of pudding.  Store it in a jar (or other container) in your fridge!  It should last about a week (if you don’t eat it all in one sitting…).

*If you don’t want peanut butter in this, just skip it and add 1/4 cup of butter instead.

    I didn’t have arrowroot, so I used coconut flour and added an egg. I also used coconut milk. The texture was probably grainier than yours but the taste was HEAVENLY! :)
