Anniversary Waffles
As you may have read, yesterday was our 5th anniversary! In honour of the special occasion I made some tasty waffles. They’re not the type of waffles I’d usually make because they had some ingredients that we just don’t use normally. However, there’s a recipe that Peter really likes, so I tweaked it a bit and produced our Anniversary Waffles!
Anniversary Waffles:
- 2 cups whole wheat flour
- 1 cup maple syrup
- 1.5 cups melted butter
- 1 cup of coconut milk
- 4 eggs
- 4 pkgs. vanilla sugar (found in European sections usually)
- Salt to taste
Mix all ingredients together until you form a thick batter that can still run off the spoon. Cook in your waffle iron. Keep in well-sealed plastic bags in your freezer.
