Today is our final full day on vacation. Technically tomorrow is vacation too, but let’s be real: traveling via plane all day for many, many hours is not super relaxing.

In any case, Belgium has been short but sweet with Peter’s parents (who live here). I don’t have any “fabulous” photos of us to share, but I have one of a fabulous dinner my mother-in-law made for us tonight!

It features steak, roasted carrots, mashed potatoes, mashed turnip, Brussels sprouts (appropriate!), gravy & pickles. It was a fantastic conclusion to our trip.

I’ll be back to updating you on all of our adventures in real detail with legitimate pictures this coming week. Plus a couple of recipes I engineered while being away!
