Shrimp ‘n’ Beans
This dish is a little bit like an over-excited burrito filling, a bit like gumbo but thicker, and more than a little bit tasty! Plus, it yields A LOT. Like, enough to serve 6-8 people easily. Plus it can easily be made vegetarian!
Shrimp ‘n’ Beans:
- 2 small onions, diced
- 1 tbsp. minced garlic
- 1 tbsp. oil
- 1 tsp. salt
- 1 tsp. crushed red pepper flakes
- 1 tbsp. chili powder
- 1/2 tsp. cinnamon
- 1 tsp. dried oregano
- 1 tsp. parsley flakes
- 1 red pepper, sliced
- 1 orange pepper, sliced
- 1.5 cups diced tomatoes
- 1 cup corn
- 1 3/4 cup cooked black beans
- 2.5 cups shrimp, peeled & cooked
On medium heat saute the onion, garlic, oil and spices until the onions and garlic are soft. Add in the tomatoes and cook until the liquid is reduced to almost nothing. Reduce the heat to medium-low and add in the black beans and corn and cooked for 2-3 minutes. Add in the shrimp and cooked for 3-5 minutes just until they’re heated through (they will begin to curl). Voila!
Serving ideas: serve over top of rice or baked sweet potatoes (we did this!), or in tortillas. Top with lettuce, shredded cheese, sour cream, salsa, diced avocado, etc. Or, eat as is and dip tortilla chips in it!
