PB Stuffed French Toast
Seeing as I’m in “vacation” mode these days, I figured why not spoil myself with a fun breakfast? So that’s just what I did. I did a quick brainstorm the night before, and realized that some super sweet peanut butter-stuffed French toast would be just the ticket…
All you need is chocolate almond milk, peanut butter, 1 egg, a dash of vanilla, a pinch of salt, some butter, and you’re done. Yum. This tastes like vacation. Seriously.
Peanut Butter Stuffed French Toast:
- 3/4 cup chocolate almond milk (you can just use plain milk as well)
- 1/2 tsp. vanilla
- Pinch of salt
- 1 egg
- 2 slices of bread
- 1/2 cup peanut butter (crunchy is tasty!)
- 1/2 tbsp. butter
In a shallow dish, whisk together the milk, vanilla, salt and egg. Put each slice of bread in a single layer in the egg mix to soak for about 3-5 minutes on each side. Meanwhile, heat up your crepe pan or griddle to medium heat and melt your butter in the pan. Place each piece of soaked bread on the pan and all it to brown on each side (approximately 3-5 minutes depending on your burner/pan). Once each side is browned, layer the peanut butter on one piece and layer the bread like a sandwich, hiding the peanut butter in the middle. Cook it up for about 1 minute on each side, and then serve with a drizzle of maple syrup. Yum! Serves 1.
