Greek Bean Salad

In my parent’s house it’s usually my dad who does the cooking.  However, my mom is one great cook as well, as was proven this past week by enjoying two delicious salads that she made.  I plan on sharing both with you, but for now, here’s my mom’s Greek Bean Salad.

Greek Bean Salad:

  • 3 cups of assorted cooked beans (kidney beans, pinto beans, chickpeas…they sky’s the limit!)
  • 2 cups of grape tomatoes, all cut in half.
  • 1/2 of a bunch of green onions, diced
  • 1/2-3/4 cup Greek & Feta salad dressing
  • Feta, for topping

Mix together the beans, tomatoes, green onions and add a 1/2 cup of dressing at first.  Mix and see if you need to add more.  Do so according to your tastes.  Top it with feta when you serve!  It can be left in the fridge for a few days before serving, and it just gets better.
