Banana Muffins

Banana muffins are classic!  Pretty much everyone has tasted them and most likely made them!  I’m one of those people who throws bananas that are going bad into my freezer to use at a later date.  I often use them to make banana bread or banana muffins.  When we were low on food in our fridge after being away for a week recently, I grabbed the bananas out, our remaining eggs and all the other staples from my pantry and went to work making these delicious muffins to eat for breakfast.  They’re tasty, but not overly sweet, and perfect with a cup of tea!

Banana Muffins:

  • 1/3 cup coconut oil (not melted)
  • 1/2 cup honey
  • 2 eggs
  • 1 tsp. vanilla
  • 1 cup of mashed bananas (I use 2 frozen bananas sliced thinly)
  • 1 cup of whole wheat flour
  • 3/4 cup of spelt flour
  • 1/2 tsp. salt
  • 1 tsp. of baking soda
  • 1/4 cup hot water

Preheat oven to 325F.  In a large bowl, cream coconut oil and honey together.  Add eggs and mix well.  Stir in the bananas and vanilla.  Stir in flour and salt.  Add baking soda to hot water and mix together.  Then add the baking soda mixture to the batter.  Grease muffin tins as well as the top edge of the tin, and fill them pretty much full with batter.  This will allow them to grow above the cups like real muffins and not get stuck!  Bake for 35-40 mins. (watch them as your oven might be different!).  Cool and enjoy!

    I remember eating banana muffins when I was a kid. I haven’t made them for a while but they’re definitely a good breakfast.

    Funny you put this up now, I was going to make some then realized I had no coconut oil yet! Would it be alright if I used butter?
