Chocolate Avocado Muffins

I came across this original recipe for Chocolate Avocado Muffins, and I was in awe…

I had to try them!  For your convenience, here is the recipe with some minor changes I made.

Chocolate Avocado Muffins:

  • 1 ripe avocado
  • 1/2 cup of melted chocolate
  • 1 cup of honey
  • 3/4 cup coconut milk
  • 1/3 cup coconut oil
  • 2 tsp. vanilla extract
  • 1 1/2 cups of whole wheat flour (I actually split whole wheat and spelt)
  • 1/3 cup shredded coconut
  • 1 tsp. baking powder
  • 1 tsp. baking soda

Blend all of the wet ingredients together well in a blender or with a hand mixer.  Combine dry ingredients in a separate bowl until well mixed.  Mix the wet and dry ingredients together.  Pour into muffin cups and bake at 350F for 20 mins. or until done.

    I have made these twice and I really like them. I just bought some more avocado to make them again!
