The other day I was craving peanut butter and banana but I had no bread, no tortillas, nothing to make this dream come true… All I had was some leftover plain cooked rice in my fridge…and so, peanut butter and banana rice pudding was born!
Peanut Butter & Banana Rice Pudding
- 2 cups of cooked rice, chilled in the fridge
- 1/3 cup of natural peanut butter
- 1/3 cup of plain yogurt
- 2 tbsp. honey
- 1 banana, sliced
Mix the peanut butter, yogurt and honey together in a small saucepan and mix together on low heat stirring constantly. Once it is well mixed, mix the sauce with the chilled rice. Stir completely until the rice is well mixed in with the sauce. Distribute into bowls for serving and slice the banana on top. This can serve 4 small portions or 2 hefty portions (I personally like a hefty portion…).
It’s a great afternoon snack or fun dessert for a peanut butter lover! The rice could easily be substituted with quinoa to make this more of a protein-dense snack.
