Pancakes
I might be a few weeks behind on posting a pancake recipe, but hey, I’ve never been one to follow the crowd! We were eating pancakes the other day for breakfast and I realized that I’ve never posted my recipe! Granted, it may not be any different than yours, but I figure it’s worth posting.
Pancakes:
- 1 1/2 cups of flour (I split between whole wheat and spelt)
- 2 tbsp. baking powder
- 1/2 tsp. salt
- 2 tbsp. honey
- 1 cup of milk (any kind will do)
- 2 eggs
- Butter
Mix all the dry ingredients together and then add the wet ingredients. Mix well. Preheat your frying pan or griddle and lightly coat it with a bit of butter. Ladle your batter onto the pan and when you start to see bubbles forming on the edges of the pancake, flip! Cook until nicely browned on both sides.
