Strawberry Banana Bliss Cake

You all know that my favourite cake is the apple zucchini cake with cream cheese frosting.  It’s pretty darn heavenly, and rather healthy too!  We make it for most occasions.  It seems to be a hit with everyone and it makes a large slab cake, which is handy for feeding a crowd.

Last week I needed to make dessert for another crowd and I decided I would try the cake a little differently with a couple of different ingredients: strawberries and bananas.  Oh am I ever happy that I did!  It made what I’m affectionately calling strawberry banana bliss cake!  Delicious for dessert, a snack and…breakfast…

Strawberry Banana Bliss Cake:

  • 1 cup whole wheat flour
  • 1 cup spelt or kamut flour
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. ground sea salt
  • 1 tbsp. ground flax seed
  • 1 cup of honey or maple syrup
  • 1 cup melted coconut oil
  • 4 beaten eggs
  • 2 tsp. vanilla
  • 1-2 cups of strawberries, diced
  • 2 bananas, mashed (you can use frozen!)
  • 1/2 cup of nuts (almonds, walnuts, etc.)

Mix the wet ingredients in one bowl and the dry ingredients in another bowl.  Once each bowl is mixed, combine them together and mix well.  Grease a 1″ deep baking dish and pour the mixture in.  Cook at 350F for 25 minutes.  Top with cream cheese frosting (it’s a must!).

    I never thought of combining those together in a cake. I’ll have to try. I have so many recipes of yours that I want to try when I get back on my feet. Right now I’m in survival mode with this newborn.
